At UTTB HQ we absolutely LOVE salads! They can be a great addition to any meal or great as a meal of their own. The best part is you can throw together your favourite veg and protein, drizzle with some healthy fats and boom! You're ready to go! So to prove how much we love salad we launched A Salad A Day Mini Challenge within our private Facebook Group where we challenged our Tribers to include a salad in their day for 7 days! We've picked out 10 of our favs and included them here for you ALL to enjoy! Oh and if you want some extra inspo you can also find our calorie-friendly salad dressings here.

MARY'S WHOLESOME CHICKEN SALAD

Ingredients:

- 2 handfuls Mixed leafy greens
- tomato
- cucumber
- celery
- green pepper
- avocado
- grilled chicken
- broccoli
- cauliflower
black beans
- red onion
- topped with a mix of quinoa
- Dressing: lime, olive oil and seasoning dressing

LEAHS HEARTY PUMPKIN AND LAMB SALAD

Ingredients:

- Mixed leafy greens
- 2x cherry tomatoes
- 1x cucumber
- 1/2 radish
- 3/4 cup pumpkin
- 1 Tbs pine nuts, toasted
- 1 Tbs feta
- 2x lamb cutlets
- Tbs caramelised balsamic

DEBBIE'S SPICY BLACK BEAN BURGER SALAD

Ingredients:

- 1x spicy black bean burger 
- ¼ avocado
- 1 cucumber
- tomatoes
- olives
- 2 handfuls spinach leaves
- sprinkle mexican blend cheese on top

JANINE'S SMOKED SALMON SALAD

Ingredients:

- 2 handfuls lettuce and spinach
- smoked salmon
- black olives
- cherry tomatoes
- red peppers
- spring onions
- sprinkled with feta
- topped with seed + nut mix and oregano

LISE'S GREEN QUINOA SALAD

Ingredients:

- finely chopped collard greens
- quinoa 
- cucumber
- red onion
- grape tomatoes
- carrot
- spinach
- squeezed lemon
- cilantro
- tbs olive oil 

STACY'S HOT BANANA PEPPER RING SALAD

Ingredients:

- artisan lettuce
- white mushrooms
- hot banana pepper rings
- smoked sharp and Colby Jack cheese
- sunflower kernels,
- 1/4 avocado
- tomatoes
- topped with 1tbs avocado ranch and cilantro

AMALS MEDITERRANEAN BUDDAH BOWL

Ingredients:

- 1 egg
- lettuce
- cucumber
- tomatoes
- red onion
- 1 cup brown rice
- 1tbs hummus 

SOPHIA'S EASY PEASY TUNA + ARTICHOKE SALAD

Ingredients:

- 2 handfuls spinach
- tuna, canned 
- roasted red pepper
- artichoke hearts
- black olives
- feta cheese
- dressing: 2tsp olive oil, 1tbs lemon juicie, garlic pwder, dill, salt and pepper

STEPHANIE'S GREEK CHICKPEA SALAD

Ingredients:

- chickpeas
- cucumbers
- cherry tomatoes
- Kalamata olives
- artichoke hearts
- red onion
- sprinkle of Feta on top
- Dressing: 1tbs olive oil. fresh lemon juice, salt, pepper, oregano
- Optional additions: hard boiled egg, leafy green mix, peppers

AMY'S MINCED BEEF AND BEAN DINNER SALAD

Ingredients:

- Lean minced beef and grain grease 
- 10oz diced tomatoes with green chilies
- 1tsp fajita seasoning
- 1lb frozen mixed vegetables
- optional extra: sprinkle of cheese on top or green salsa and leafy greens

Method:

1. Brown minced beef and grain grease
2. Add tomatoes and fajita mix, cover and simmer for 5-10 minutes
3. Add frozen mixed vegetables
4. Serve with cheese or green salsa
