I donāt know about you but I love a good snack! Especially a full day in front of the computer can have me wanting all the snacks and lead to a bit of mindless eating. For days like this I love to whip up these small but mighty Peanut Energy Bites. This recipe has actually taken inspiration from the lovely Nikole from Ur Health Nut and the reason why I loved this recipe so much was because of the simplicity. If you're a regular to my recipes you'll know that I only do quick and easy. I can say this is another one that adheres to repertoire!Ā Instead of the semi-sweet chocolate chips we've chosen to use cacao nibs to lower the sugar content and make this challenge friendly to all of the people within my Facebook Tribe completing the #YearToThriveChallenge.Ā
Makes:Ā Approx. 10 ballsĀ
Time:Ā 10 mins prep, 30 mins to chillĀ
Calories per serving:Ā Approx. 180 per ball
IngredientsĀ
- ½ cup natural peanut butter (I use Pic's)
- ā cup pure maple syrup
- 1 teaspoon pure vanilla extract
- 1½ cups rolled oats (swap for GF oats if needed)
- 2 tablespoons ground flax seeds
- ½ teaspoon cinnamon
- ā cup cacao nibsĀ
Method
- In a large bowl, add the peanut butter, maple syrup and vanilla. Stir until smooth and well combined.
- Add the oats, flax seeds, cinnamon and cacao nibs. Stir until the dry ingredients are evenly coated with the wet mixture.
- Line a baking sheet with parchment paper.
- Scoop a heaped tablespoon of the mixture and roll into a 1 ½-inch balls. Transfer to baking sheet. Continue until all the mixture is used up.
- Chill in the fridge for at least 30 minutes to firm up.
- Store in an airtight container and enjoy as a snack or dessert!
